Delicious & Creamy Cauliflower Curry With Coconut Milk

Cauliflowers...again?? 
Well, they are seasonal now and we can't help but savor them....Nothing ever beats the fresh & unparalleled flavor of seasonal produce and since cauliflowers are reigning our local farmer's market...thus making it to the table every other day....we love cooking them differently & by this time have had a fair share of their deliciousness. But, among all the stir fries,fritters,curries and stuffed breads we have made using them,this curry was so dreamy good....we have to rethink about the fair share J
The delicate aroma of curry leaves stewing in rich coconut milk with spices and cauliflower is one you must try out...and we assure you will love every bit of this curry....the making and tasting alike...cause the aromas which waft in air as this curry gets made is enticing and always makes us go for seconds while we savor it.

Serves : 4

Ingredients Required :

1 medium head cauliflower,cleaned,all hard stalks removed and cut into small,bite sized pieces

2 medium onions (we used red ones) peeled,cleaned and chopped

2 medium sized red ripe tomatoes cleaned and chopped

1 inch piece fresh ginger cleaned,peeled and chopped

5 large or 10 small cloves garlic peeled and chopped

1 cup unsweetened thick coconut milk (not coconut water, not coconut cream)

2 tablespoon cooking oil

1 inch stick cinnamon (dalchini)

1/3 teaspoon cumin seeds (sabut jeera)

10-12 curry leaves or a sprig of curry leaves (best used fresh)

1 teaspoon curry powder (sabzi masala)

1/4 teaspoon turmeric powder (pisa haldi)

1/2 teaspoon Kashmiri red chili powder or Hungarian sweet paprika powder

2/3 cup water

salt to taste

Process : Just before you start cooking, blend onions,tomatoes,ginger and garlic into a smooth paste adding a tablespoon of water to aid the process. Set aside.

Heat 1 tablespoon oil in a wok over medium high. Add cinnamon and stir to release aroma.

Add cumin seeds and let crackle,then add curry leaves.

Toss, turn heat to medium and add previously blended onion paste into wok.

Using back of a ladle/cooking spoon stir mixture in a circular/clockwise motion occasionally for about 2-3 minutes till water evaporates out of the mixture and raw smell disappears. Take care it doesn't get burnt while cooking.

Now,turn heat to low. Add turmeric and chili powders, 1 tablespoon of oil and stir to blend well.

Add cauliflower florets into wok.

Gently mix the ingredients using a spatula to help spice paste coat the florets well as they cook for half a minute. Please take care it cooks but doesn't get burnt.

Next, add water. Using spatula, gently stir contents and bottom of wok to deglaze it. Stir in curry powder,salt and let come to a boil over medium heat.

When it starts boiling,simmer heat and stir in coconut milk into the wok...mix well.

Cover partially and cook over low heat till gravy thickens to desired consistency,florets get tender and flavors blend well. Turn off heat.

Serve warm garnished with chopped fresh parsley/cilantro leaves along side hot flat breads,onions cut into rings and slices of lemons for a blissful meal time.

ü  Make a smooth paste of onions,tomatoes,ginger and garlic for a creamy gravy. Blend them just before you start cooking as onions turn bitter if pasted and kept for a long time.

ü  Stirring cinnamon in hot oil helps release its aroma. Be careful while adding curry leaves as they tend to splutter. The fresh ones give the best results.

ü  After you add blended paste into wok, stirring occasionally in a circular/clockwise motion helps cook the paste uniformly,prevents burning,makes water evaporate while making flavors blend well. Take care the paste doesn’t get burnt/charred while it cooks.

ü  Be gentle as you mix the cauliflower florets with spice paste inside the wok…this helps in retaining their shape. Small bite sized florets absorb flavors well and cook quickly.

ü  After adding water, gently stir ingredients and bottom of wok to deglaze it for getting a flavorful curry.

ü  Coconut milk used is unsweetened and must not be too thin. Don’t confuse it with coconut water/cream.

ü  Simmer cook the ingredients at last keeping wok covered partially. This helps thicken the gravy and cook florets.

ü  After cooking,the florets must be tender but not mushy/over cooked.

A VERY IMPORTANT NOTE :

Different masala powders add different flavors....so the amount of garam masala or curry powder used in this dish varies as per taste. By now we have observed that while most store bought masala powders give more flavor to curries when added during final stages of cooking the bhuna (as mentioned in this recipe), a few masala powders (including our homemade garam masala powder) give best results when added while the gravy (bhuna masala and water) is simmering. So, please check out what works best for you. Besides, care must be taken to simmer and cook bhuna masala while making a red/brown gravy to prevent overcooking of masala powders.

I should have bought cauli today. Sat is meatless day for us and this curry would have been absolutely perfect.
